Usuba (thin knife) is the traditional vegetable knife for the professional Japanese chef. It is a single bevel knife designed for vegetable preparation. It have a flat bevel on the front side and a hollow ground urasuki on the back. Kamagata Usuba is one varation of usuba popular in Kansai area, which as a distinctive tip.
